"Seignette cognac, despite its history, is a thoroughly modern take on the genre. The fresh and floral flavours lend themselves particularly well to cocktails. Seignette works well in drinks such as the Apricot Rush (an apricot twist on the Milk & Honey classic: Gold Rush)"

Notes from Neil Donachie, Head Cocktail Curator

Cognac is a type of brandy named after where it is produced Cognac, France. Similar to Champagne, Cognac falls under French appellation d'origine contrôlée (AOC) designation. This means that there are certain requirements to be called a cognac.

For example, only certain grapes can be used, the most widely of which is Saint-Émilion. Cognac must also be twice distilled in copper pot stills and aged at least two years in French oak. Similar to whisky production (which is 3 years and 1 day) most cognac spends longer "on the wood" than the legal requirement.

The Seignette family can be traced back to the 17th century Western French coast, known as prominent traders in salt and cognac in the La Rochelle region. Their coat of arms is recognised by a swan, which historically populated the banks of the Charente River in Cognac, as well as being a symbol of power, grace and elegance. The swan features on the Seignette VS label in tribute to the family’s legacy.
