We use Cazcabel tequila as the foundation of the recipe because of its distinctive field-to-glass approach. Cazcabel grows its agave on its own family estate, monitoring the plants carefully and harvesting them by hand only when they have reached full maturity. After harvesting, the land is rested for at least two years to help restore its nutrients.\u003c\/p\u003e\n\u003cp\u003eThe agave is traditionally slow-cooked in brick ovens before being milled, fermented and double-distilled in copper-lined stills.
